Jam Drops With Added Protein

Ingredients

  • 1/2 cup Melted coconut oil
  • 2 tbsp Vanilla protein powder (your particular brand may alter the final taste...)
  • 1/2 tsp Baking powder
  • 2/3 cup Coconut flour
  • 1 cup Desiccated coconut
  • 3/4 cup Coconut sugar or brown sugar
  • 3 Large eggs

Jam recipe: 1 cup frozen/fresh raspberries + 2 tablespoons chia seeds + (optional) 1-2 tablespoons maple syrup/honey/rice malt syrup (should be made pre-making the cookies, or you could of course use a pre-made jam)

Instructions

  1. Preheat oven to 170 degrees Celsius and line a baking tray with baking paper

    Whisk the melted coconut oil and coconut/brown sugar together until combined

    Whisk in 1 egg at a time, then once incorporated add and combine the rest of the dry ingredients

    Roll dough into small balls and flatten with a slight dip in the middle (for the jam)

    To make the jam: add all ingredients into a low-medium heat pan, stir consistently until raspberries have broken down and starts to thicken up with the chia seeds. Once incorporated, place in fridge for a couple of hours to set

    Place a teaspoon of jam mixture into the centre of the cookie

    Place in oven for approx. 12-14 minutes until golden

    Let to cool
